Jorge Vasques grew up among the coffee trees in Colombia. From a young age, he took over responsibility for his family\u2019s coffee farm and over the years has produced several outstanding lots \u2013 and this one is no exception. A honey-processed coffee we fell for instantly. Fruity, smooth, and incredibly good looking.
\n<\/em>La Roca means The Rock \u2013 literally. Our warmest recommendation? Enjoy a cup of La Roca on a rocky outcrop in the forest, on a comfy stone by the water, or in front of the blockbuster The Rock with Sean Connery.<\/em><\/p>\n

Jorge El\u00edas Rojas V\u00e1squez was born into a coffee-growing family in La Armenia, Planadas, Tolima. He lost his father at the age of five, and by the time he was twelve, he was already taking responsibility for the family farm. In 2010, he acquired La Roca Estate \u2013 a 4.5-hectare farm located 1,857 meters above sea level, surrounded by nature reserves and waterfalls \u2013 where he fully dedicates himself to producing high-quality specialty coffee. Jorge\u2019s meticulous work in cultivation and processing has earned him numerous accolades, including the Planadas Coffee Auction 2020, Top Roast 2022, and an impressive third place in Colombia\u2019s Cup of Excellence for a honey-processed coffee. He also won Best Honey-Processed Arabica at the 2023 World Coffee Challenge in Madrid. His expertise in fermentation and processing has not only elevated his own coffees but also helped other farmers achieve award-winning quality.<\/p>\n

This lot of Yellow Caturra is honey-processed. The coffee cherries are harvested at peak ripeness and fermented in their fruit pulp for 36 hours. After depulping, fermentation continues for another 36 hours to further develop the flavors. The coffee is then carefully dried under close supervision, and once it reaches 15% moisture, it rests for 48 hours before completing the final drying stage.<\/p>\n
