Jorge Vasques grew up among the coffee trees in Colombia. From a young age, he took over responsibility for his family’s coffee farm and over the years has produced several outstanding lots – and this one is no exception. Jorge Elías Rojas Vásquez was born into a coffee-growing family in La Armenia, Planadas, Tolima. He lost his father at the age of five, and by the time he was twelve, he was already taking responsibility for the family farm. In 2010, he acquired La Roca Estate – a 4.5-hectare farm located 1,857 meters above sea level, surrounded by nature reserves and waterfalls – where he fully dedicates himself to producing high-quality specialty coffee. Jorge’s meticulous work in cultivation and processing has earned him numerous accolades, including the Planadas Coffee Auction 2020, Top Roast 2022, and an impressive third place in Colombia’s Cup of Excellence for a honey-processed coffee. He also won Best Honey-Processed Arabica at the 2023 World Coffee Challenge in Madrid. His expertise in fermentation and processing has not only elevated his own coffees but also helped other farmers achieve award-winning quality.

This lot of Yellow Caturra is honey-processed. The coffee cherries are harvested at peak ripeness and fermented in their fruit pulp for 36 hours. After depulping, fermentation continues for another 36 hours to further develop the flavors. The coffee is then carefully dried under close supervision, and once it reaches 15% moisture, it rests for 48 hours before completing the final drying stage.
